Jane Worroll hid a camera in an alarm clock in her 80-year-old mother Maria's room at Ash Court Care Centre in Kentish Town, London, after becoming concerned.
She filmed Jonathan Aquino, 30, slapping her mother and other carers roughly moving her onto her bed and making derogatory remarks.
Ms Worroll said her mother had been the victim of a 'totally sadistic' assault.
'[My mother] is just so vulnerable; she can't get up, she can't call for help,' she told Panorama.

Filipino national Aquino was jailed for 18 months at Blackfriars Crown Court earlier this month, while four of his female colleagues were sacked by care home operator Forest Healthcare.
Ms Worroll took the footage last June and subsequently confronted managers at Ash Court Care Centre.
Her mother, who suffers from Alzheimer's and acute arthritis, has since been moved into another home.
The footage, being shown on TV for the first time tonight, shows Aquino striking Maria Worroll six times on her face, arms and abdomen.

Carers also refuse to acknowledge her, sitting and watching TV in her room and putting her to bed at 5:30pm.
Regulator the Care Quality Commission (CQC) awarded the care home an 'excellent' rating in July 2009, while another report, published four months after the incidents, failed to mention charges were pending.
A CQC spokesman said: 'Abuse of vulnerable people is a criminal matter, and is rightly handled by the police and the courts. CQC has taken action against a number of providers where a current risk to people has been identified. In this case, the risk had been dealt with by the removal of the care staff involved by the home.
'CQC's role was to make sure residents were protected once police and social services had acted to deal with the abuse shown in the hidden camera footage. CQC acted quickly and appropriately in this regard.'

The representative added: 'None of this detracts in any way from the appalling experience Maria Worroll had at this home. CQC welcomes the custodial sentence handed down to Jonathan Aquino.'
Writing in the Daily Mail, Ms Worroll said the abuse had left her 'deeply saddened'.
'It broke my heart to know this had happened to my mother at a time of her life when she was the one needing help and compassion,' she wrote.
'Care homes shouldn't be places we fear. But increasingly we do — and judging from my mother's experience, we are right to fear them. Aquino has been dealt with. He was given an 18-month prison sentence.
'But the culture of indifference is there in so many of our care homes. As are the managers who allow that culture to persist.'
